When my kids let me know they are hungry, they know they either have to wait for the next meal, or they can go to the "Fruit Drawer" in the fridge and pick whatever they want. I try to keep it stocked with lots of options so they don't get bored. And it's true too, that if you just don't have the junk around, they change they improve their tolerance for healthy food. We do still eat chicken and pork, and I still want to eat meat a little more sparingly than we do. But it is hard to get out of the rut that we "should have" some kind of meat at dinner every night. Over the past two years we've had to make such huge dietary changes that in coping with this I have done more big cooking and then we just eat the pot of whatever until it's gone, supplemented with little treats. (a few examples: a big pot of taco soup, blended vegetable soup, black bean brown rice casserole, chili, taco salad, rice-noodles, steamed potatoes). Our treats and snacks include things like frozen blueberries, keifer smoothies, carrots and other crunchy veggies, popcorn with brewers yeast and coconut oil, grain free pancakes (just eggs, pumpkin puree, arrowroot powder, salt, spices), grain free muffins made with coconut flour.<br />We are very indoctrinated by society on the subject of food. When you start to realize what is truly nourishing food, it is astounding how far it is from our standard American fare. I found reading about the Weston A. Price foundation and Sally Fallon very helpful in discovering how to nourish my family. I hear that mexican food is awesome vegetarian style, you know bean burritos..and if you make them you can make them loaded with veggies & stuff instead of sour cream and other fattening items. Chili, Lasagna (I guess not so healthy), Miso Soups, Chowders, Blk Bean Salad...there are so many meals that you can totally cut out the meat & still love the flavor. We do it all the time, not because we want to go full vegetarian, but because We want to be healthy eaters & eat meat Sparingly. You are awesome.
