So what DO you eat?

I've been asked what we eat for breakfast if cold cereal is out. We do hot cereals: oatmeal (not instant, the kids call that "slimy oatmeal"), 10 grain, Zoom (whole wheat), cream of wheat, eggs and whole grain pancakes, etc. The greatest result was one day when I offered them "emergency food," (i.e. Life cereal,) and they said, "Mom, can we just have hot cereal?" It was so great to see their change. When THEY know what good nutrition feels like, they crave that. YIPEE!

I ran 13 miles today - It wasn't fast, nor pretty, but I did it. 10 weeks to go until the marathon.

In this journey, of health, I have desired to be a vegetarian. However, I'm stuck, because the recipes I look up online are so sickly UNHEALTHY! Tons of sauces and cheese and just stuff I don't want to eat. So if anyone can guide me in this, please do.

So just a thought but the church usually discourages vegetarianism. I looked into this a while ago and finally settled on meat in moderation. I'll try to forward some articles to you that deal with this subject and were helpfull to me. It may take a while to locate them but I'll get them to ya. Way to think healthy. You inspire me!

Love the breakfast ideas...thanks. I love wholewheat pancakes, they fill you up. I hear that mexican food is awesome vegetarian style, you know bean burritos..and if you make them you can make them loaded with veggies & stuff instead of sour cream and other fattening items. Chili, Lasagna (I guess not so healthy), Miso Soups, Chowders, Blk Bean Salad...there are so many meals that you can totally cut out the meat & still love the flavor. We do it all the time, not because we want to go full vegetarian, but because We want to be healthy eaters & eat meat Sparingly. You are awesome. I love to learn from you.

I used to think 'breakfast foods for breakfast' because that's how I was raised. Over the past two years we've had to make such huge dietary changes that in coping with this I have done more big cooking and then we just eat the pot of whatever until it's gone, supplemented with little treats. (a few examples: a big pot of taco soup, blended vegetable soup, black bean brown rice casserole, chili, taco salad, rice-noodles, steamed potatoes). Our treats and snacks include things like frozen blueberries, keifer smoothies, carrots and other crunchy veggies, popcorn with brewers yeast and coconut oil, grain free pancakes (just eggs, pumpkin puree, arrowroot powder, salt, spices), grain free muffins made with coconut flour.
We are very indoctrinated by society on the subject of food. When you start to realize what is truly nourishing food, it is astounding how far it is from our standard American fare. I found reading about the Weston A. Price foundation and Sally Fallon very helpful in discovering how to nourish my family. I believe we can help build Zion from our kitchen counters :)

Thanks for your breakfast menu. Do you think you could add your snack menu to the blog? That is one place that I really get stuck after fruits and veggies.
On another note~ I have not eaten red meat in over a year and it has been pretty easy. We do still eat chicken and pork, and I still want to eat meat a little more sparingly than we do. But it is hard to get out of the rut that we "should have" some kind of meat at dinner every night. I am on the lookout for a good vegetarian cookbook~ not to cut out meat altogether, but to get some more options in the menu. Good luck with the marathon!!!!

You can make any italian dish veg, and still feel satisfied. :) We eat meat MAYBE 2x a week. More because we can't really afford to buy a ton of meat, and because we get so many good fruits and veggies from our co-op, we are well fed. And congrats on 13 miles! I run 1 and a half, and I'm ready to fall over. :)

I eat a lot of cookies. Is that at all helpful? :)

Fish, Fish and Fish. We also love soups that have vegi's and/or beans blended up for the base to thicken it. And blender pancakes are a fav breakfast food. I sure miss your uplifting spirit and great ideas. i hope you make it back to Dixie someday. The Brickey home goes up for auction on Friday 8 AM, starting bid is $25,000, with 5% down at bid. We'd love to have the Naivalu's for neighbors. I hope you get this comment.
